Grilled Pineapple with Rum Raisin Sauce
Grilled Pineapple
1 large pineapple cut into 6- 8 wedges
4 TB. extra virgin olive oil
1/2 cup plain Greek yogurt
Rum Raisin Sauce:
2 TB Butter
2 TB Coconut Rum
2 TB. brown sugar
dash of cinnamon
2 TB. chopped pecans
2 TB. golden raisins
Heat gas grill to 400 degrees.
Brush the pineapple wedges with the olive oil and place on the preheated grill. Cook 6-7 minutes on each side until they are nicely charred. Remove and place on a serving dish. Cool slightly and top with Greek yogurt and /or the rum raisin sauce. (Recipe follows)
Rum raisin sauce
In a saucepan combine the butter, coconut rum, brown sugar, cinnamon, pecans and golden raisins. Cook on medium heat stirring constantly until the sauce thickens. Pour over the pineapple and Greek yogurt.
