Curried Peanut Drumsticks

Curried Peanut Drumsticks

 

Serves 3-4
8 chicken legs
3/4 c up of creamy peanut butter
1 Tablespoon of Curry powder
1 Tablespoon of chili powder
1/4 cup of soy sauce
1/2 cup of light coconut milk
2 Tablespoons of apple cider vinegar
1/2 cup orange juice
salt and pepper to taste (optional)

Garnishes:
lime wedges
cilantro
dry roasted peanuts
orange marmalade

Directions:
Place chicken legs in a gallon size zip lock bag.
In a medium size bowl, whisk together the peanut butter, curry powder, chili powder, soy sauce, coconut milk, apple cider vinegar, salt, pepper and orange juice until well combined. Pour over chicken and secure bag. Place in the refrigerator overnight to marinate.

Bake in a 375 degree oven for approx. 40 minutes or until chicken has an internal temperature of 165 degrees. Check with a food thermometer.
These are also delicious on the grill. Again check for an internal temperature of 165 before enjoying.

Garnish as desired with your choice of the items listed above, serve with warm white rice.
