Fall Sweet Cracker Crunch

Cooking spray

38 saltine crackers
3/4 cup butter
3/4 cup light brown sugar
1/2 tsp. cinnamon
1/4 tsp. ground nutmeg
8 oz. semisweet chocolate chips
Assorted toppings of your choice: pretzels, candy corn, peanuts, sprinkles, candies, small cookies etc.

Preheat oven to 425 degrees.

Line a jelly roll pan with aluminum foil and spray with cooking spray and line up saltine crackers with the salt side down in a single layer.  Set aside.

In a medium sauce pan melt the butter, add in the brown sugar, cinnamon and nutmeg. Continue cooking the mixture until it boils and becomes caramel in color. After the mixture comes to a boil continue cooking  for 2-3 minutes. Remove from heat and pour evenly over the pan of saltines,

Place the pan of saltines with caramel mixture into the preheated oven for 5 minutes.  Remove pan from oven.  The saltines should be golden and bubbly.  Pour on chocolate chips and when melted spread evenly with a knife.  Cool for 5 minutes and then add the toppings of your choice.

Transfer the pan to the freezer for 25 minutes. Break the one big sheet into various pieces.  Store in an airtight container.
