Spring Greens and corn muffins

Spring Greens for Two

Ingredients:

6 oz. of greens (your choice: collard, spinach, chard etc)
3 strips of bacon
1/2 medium red onion (sliced)
1/2 tsp. of steak seasoning
1 Tblsp. of  apple cider vinegar

Directions:

In a medium frying pan cook bacon strips  until done.  Remove bacon and set aside, when cool, cut into 1/2 inch pieces.  Reserve the bacon grease in the pan.

On medium heat sauté the onion in the bacon grease until it is translucent in color.  Add in the greens, steak seasoning, and apple cider vinegar.  Cook until the greens wilt and become dark green in color. Before serving add in the bacon pieces and warm before serving. Great with ham steak, fried chicken and or corn muffins.
