1 1/2 lbs Chopped Kale (or a combination of Kale, Brussel Sprouts, broccoli sticks, green cabbage, red cabbage)
3/4 cup pepitas
1 cup grated asiago cheese
1/3 cup dried cranberries
salad dressing
1 tsp poppy seeds
6 tbsp olive oil
1/3 cup orange juice
zest and juice of one lemon
In a small bowl combine the olive oil, orange juice, lemon zest and juice, and poppy seeds. Wisk vigorously until combined. Season with salt and pepper to taste.
In a large bowl toss the kale (or other vegtables), with the cheese and pepitas. Gently toss, adding the salad dressing.
